Delicious and Nutritious Orzo Spinach Salad

This salad is light but filling, and it is addicting! You will be going back for seconds with this orzo and spinach salad.

You can make any size batch you would like, you'll just have to change the amounts of the ingredients to your liking.

Ingredients

  • 1/2 box Orzo Pasta
  • 6-8 average sized handfuls of spinach - chopped
  • 1 cup Slivered Almonds
  • 1 cup Craisins
  • 1 cup Feta Cheese
  • Lighthouse's Poppyseed Dressing & Dip

Instructions

  1. Cook orzo pasta according to instructions on the package. Drain and rinse with cold water. Put into a large bowl/container.
  2. Chop the spinach (or I just use my hands and tear into quarters). Add to the orzo, try to keep an even ratio of orzo to spinach, maybe even a little more spinach than orzo, whatever you might prefer.
  3. Add slivered almonds, craisins and feta cheese (may need to adjust amounts to your liking).
  4. Mix in the dressing. I just "eye" it, to my liking - I go light on the dressing myself, it is sweet so you do not need a lot.
  5. Eat right away then store in refrigerator.

Remember, there is really no specified amounts, the amounts above are what I use. You can adjust all ingredients to your liking and for how many servings you want out of it.
